Summer of Food

Well, summer is almost over and this is only my third blog post! I've been so busy lately that I haven't had time to blog. But today I have a little time. This summer has been my ultimate summer of food—working at a food truck and Pizza Factory and taking some cooking classes. That's no problem for me though. Cooking and baking are one of my biggest passions. I love taking ingredients and watching them evolve into a flavorful dish. I am definitely a foodie, that's for sure. Here are some of my favorite dishes I've made this summer with a recipe on crepes. Enjoy!

         Grilled Pineapple with Vanilla Creme Fraiche and Mint               Flank Steak Street Tacos with Homemade Chips & Guac 

 This is a pizza with my choice of toppings which include the following:                                                                                                 pesto, sautéed asparagus and mushrooms, cherry tomatoes, mozzarella cheese, and bacon bits.         


       Crepes  (Easy)  

Prep Time: 10 minutes
Cook Time: 20 minutes

Servings: 4

Ingredients:
1 cup all-purpose flour
2 eggs
1/2 cup milk
1/2 cup water
1/4 teaspoon salt
2 tablespoons butter, melted

Directions:

1. In a large mixing bowl, whisk together the flour and the eggs. Gradualy add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
                                                             
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.

3. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

*Tip: the batter will be better if it is made a day or two in advance*
